If you enjoy dining al fresco there is a wide choice of different outdoor cooking methods you can use, depending upon your preference, be it Chinese, barbecue, pizza, campfire cooking, etc.
You may love to barbecue but have perhaps never tried smoking food. You could be pleasantly surprised just how versatile an Offset BBQ Smoker is and the quality and flavour of cooking you can achieve with it. It’s a method of slow cooking food, which maintains its succulence whilst infusing some additional flavour from the smoke.
Lit charcoal is placed in both the cooking and side chambers, then a couple of hardwood logs added to the side chamber. With the lids down, you bring the smoker up to temperature using the in-built thermometer to monitor the heat – generally between 80°C and 130°C is ideal.
When up to temperature, move the charcoal in the cooking chamber around the edges, placing the food on the grill grid, avoiding placing it directly over the hot coals (indirect barbecuing) and close the lids. The temperature and smoke intensity can be adjusted by opening and closing the inlet and outlet vents on the smoker.
Since the food does not cook at high temperature, it is very difficult to burn it and it should be turned approximately once an hour so that it smokes evenly. Depending on the length of time you are smoking, you may want to place a pan of water on the rack in the side chamber which will moisten the smoke before it flows into the cooking chamber. Alternatively, you could fill a spray bottle with water, apple juice or beer and spritz the food.
Instead, you can use the Offset Smoker as a traditional BBQ, grilling your food directly over the hot coals with the lid open or by employing the indirect cooking method, where the hot coals are spread to one side and the food is cooked with the lid down, not directly over the flames. The choice is your!

01 October 2020 by: JIKWe Love our Biloxi Offset BBQ Smoker Grill which was delivered the following day after we ordered for it.. It was relatively easy to assemble and did the job as advertised. Garden Gift Shop posted new thermometer gauge to replace defective one within 24 hours. The Smoker Grill is compact (not too large not too small) and it looks lovely in our garden.
